Dry Nutmeg

Mace

Nutmeg
Nutmeg is an original spice crop from the Moluccan Islands which have been traded and cultivated for many generations. The mollucas origin Nutmeg is superior in the world market with it 's distingtive aroma and high oil yield, due to the specific growing environment.

Indigenous from the Banda Island and spreaded to other Moluccan Islands, North Sulawesi, Siau and surrounding islands.

'Nutmeg is an original spice crop from the Moluccan islands'

The spice made from the seed of the fragrant nutmeg (Myristica fragrans) tree. The spice has a distinctive pungent fragrance and a warm slightly sweet taste; it is used to flavour many kinds of baked goods, confections, puddings, potatoes, meats, sausages, sauces, vegetables, and such beverages as eggnog.

The seeds are dried gradually. During this time the nutmeg shrinks away from its hard seed coat until the kernels rattle in their shells when shaken. The shell is then broken and the nutmegs are picked out. Dried nutmegs are grayish brown ovals with furrowed surfaces. The nutmegs are roughly egg-shaped, about 25 mm long and 17 mm wide, weighing 5–10 g dried.

Mace is the spice made from the reddish seed from of the nutmeg.  Its flavour is similar to nutmeg but more delicate; it is used to flavour baked goods, meat, fish, vegetables and in preserving and pickling.

KPM spice processing

We developed a drying oven to maximize and stabilize the process of drying nutmeg and other spices.

With our innovative dry oven heated by a solar water system, we can increase our volume and keep processing under all wether conditions.

'Innovative, environmental friendly and effective'

We developed this drying oven to optimize the process of drying mainly nutmeg but also other spices.

The innovation we made here is to use the biggest natural source we have in Ambon: 'the sun'.  The solar heated panels which we placed on our roofs are containing circulated water, heated by the sun and reaches a temperature of 60 C.

The water is collected in a large boiler where the temperature is controlled. From there the water is pumped into the oven, where the convection heat is speaded by fans. The required  electrical energy is provided by solar panels.

We also developed a program to educate our more than 250 farmers with over 25.000 trees how to maximize their long term results .

Many of the  'rules' are based on the generations old cultural embedded Moluccan ADAT.

'Combining innovative technology with ancient Adat traditions'
